Delicious Pink Potatoes

Just another random post about food...I want to tell you how to make PINK POTATOES -- Because they are amazing...

It's not so much a "recipe" as one of those Rachael Ray fast & easy techniques...and the amounts and actual items you put into them is pretty much up to you -- and your own personal taste.

Basically, it's mashed potatoes with tomatoes -- and I promise you -- pink potatoes will be a BIG HIT...

Peel the potatoes, cube them, boil till tender,then drain... (I'm basing my amounts on 2 cups of boiled potatoes -- hey -- we're only two people...)

While they're still hot -- add your ingredients, and roughly mash with a hand potato masher:

2 TBL softened butter
1/2 cup cherry tomatoes OR one large tomato, chopped & drained
1/4 cup chopped green onions & tops OR -- 1/2 cup chopped parsley -or coppped red onion

2 TBL sour cream OR cottage cheese

1/2 cup Parmesan cheese OR grated cheddar cheese, Monterery Jack is great, too...

YUMMO...THE TOMATOES POP FROM the heat of the cooked potatoes...the whole dish turns beautiful PINK...the onions are a tad crunchy...

You could make a huge batch -- and heat them up in the micro for lunch the next day. And maybe the next day....nah....they won't last that long...

OF COURSE you can add crispy cooked bacon!!
