Eggs in a Hole?

I am a big fan of the Pioneer Woman. Ree Drummond is on the Food Channel twice a day -- and she reminds me of my friend Luveta Nickels. Maybe it's because they're both blonde...or maybe it's because they both live on a ranch...or they both look so damn cute in denim...

Recently, Ree Drummond featured a breakfast item that was one of my childhood favorites...I think she called it "Chicken in the basket".  And I'm pretty sure that's what they call it on the Cracker Barrel menu.

You know John has chickens -- and we are ALL ABOUT THE EGGS here at the Farro ranch...lol.  John cleans his beautiful brown eggs every night.  He sorts them,  polishes them...his prize chickens produce beautiful large eggs with golden yolks...SUCH delicious bounty...
You cut a hole in a piece of buttered bread -- and drop an egg into it.  Flip...cook until done...
The two little circles of toast are also delicious...
I was delighted to be reminded of this breakfast favorite. Growing up -- this was one of the very first things I was allowed to cook.  I could hardly wait to share this delicacy with Lillian -- but, as it turns out, she was not a fan. But there is still hope. Warren might be the one to see the beauty and taste the deliciousness...

Although I forgot to take a picture of the finished product -- I was in too big a hurry to EAT...yummo.  But I'm thinking Lilly might be more enthusiastic if I used a cookie cutter to make the hole in the middle.  Maybe a heart shaped cookie cutter...that would be fun, eh?

  1. My kids loved eating Egg in a hole too. They could make it and take it on the run for school. Stick to your ribs B-fast!
