Dad's Army Potatoes

The second dish for my Coldest-Day-Menu is Dad's Army Potatoes.

The best thing about these potatoes is how easy they are to make.

But, also, I quite like the story behind them.

My Dad was in the Army Air Corps during WW II.  He was very appreciative of some of the food they served in those mess tents.  Several of those dishes became part of our childhood.

SOS (Shit On Shingles) was one of our favorites...It's browned hamburger, in a milk gravy, served on toast.  Elliott often makes this for his kids.  Really...IT'S DELICIOUS...

he easiest dish...and one we all make to this day -- is Dad's Army Potatoes.   

Like the rest of this meal -- it's way more technique than recipe.

  • Peel the potatoes, slice, and put them in salt water to soak off the starch.  (at least one hour).
  • Dry them completely...
  • Place them on a shallow baking pan...(like a deck of cards, overlapping some)...and then, pour 1/2 cup of melted butter on top -- and lots of salt and pepper.
  • Bake in a 400 degree oven for about an hour...
The potatoes are done when they're brown on top and crispy on the bottom.


This little slicer has been one of the hardest workers in my kitchen for over 40 years...

So simple and,so delicious.  This is a dish that does a potato proud.
