Ritz Crackers

The other day I was helping Lilly pick out some things for her pre-school show and tell. It was circles that day. She found a bracelet -- and was putting some other round treasures in her back pack...when I said, "You could take these Ritz crackers, honey, and then the other kids could also have a snack."

She got very quiet for a minute, thinking...then said, "that's a really good idea, Grandma."

OH MY GOODNESS. It is shocking how thrilled I was when she said that. That a three-year old would be able to make my day with just a few words. It really surprised me...

And I've been thinking about how powerful those words actually are. When is the last time you told somebody they had A GOOD IDEA?? It is powerful stuff, people...

Or -- maybe it's just about the deliciousness of THE RITZ CRACKER...so they are the focus of today's Pinterest Post...

I've heard this treat called everything from "Cracker Crack" to "Puttin' on the Ritz," but I think Ritz Cracker Candy is the most simple name. See the recipe below:

Ritz Cracker Candy
  • 1 to 2 sleeves of Ritz crackers
  • 1 1/2 cup unsalted butter
  • 1 1/2 cup firmly packed brown sugar
  • 1/2 cup chocolate chips
  • 1/2 cup chopped pecans
  • 1/2 cup peanut butter chips/white chocolate chips
  • Preheat oven to 350 degrees. Line a baking sheet with aluminum foil or parchment paper and arrange the crackers on it in a single layer.
    Melt butter and brown sugar together in a sauce pan over medium-low heat. After it's melted, increase heat to medium-high and boil for 3 minutes, stirring constantly. Pour this mixture over the cracker layer.


    Bake for 5 minutes and remove from oven. Sprinkle crackers with chocolate chips and place back in the oven for 3 minutes (the oven will be turned off but still warm). Spread the melted chocolate over crackers and top with pecans and remaining chips. Allow to cool completely and break apart to serve.

    Too complicated? With Valentine's Day just around the corner -- these look like a perfect child-friendly treat. Peanut butter Ritz crackers dipped in white chocolate? I think we'll just put a candy heart on top...

    And I LOVE these...put a Rolo on a Ritz and set them in the oven...then smash another Ritz on top...

    And -- FOR HALLOWEEN...???

    I am telling you -- WITH RITZ CRACKERS -- and the odd compliment every now and then -- YOU CAN CHANGE THE WORLD, PEOPLE...

    EGGS! GLORIOUS EGGS...

    Sorry -- I screwed up yesterday's blog posting...maybe I was busy washing my windows...or taking a trip to Hawaii...there's no good reason...I just got distracted by something sparkly...

    John has 30 chickens. Which means we get 30 fresh eggs every single day. HUGE brown eggs -- many of them with double yolks. SUCH WONDERFUL BOUNTY. He loves his chickens, he feeds them and names them and collects the eggs two or three times a day. He carefully washes the eggs and sorts them in his recycled cartons (each dozen gets one or two double-yolkers). He sells the eggs for $2.50 a dozen...so they have provided a nice retirement income and activity for him....lol...

    The thing is -- there is NOTHING like fresh eggs.  When you break the hard shells, they stand up high in the pan -- the yolks are bright yellow....They are sooo delicious. 

    Eggs are nearly the perfect food. Dr. Oz says that for years they got an undeserved bad rap -- and they are nature's gift -- a wonderful, cheap source of protein...

    There are so many delicious, wonderful ways to cook eggs -- they have always been part of my favorite go-to menus.

    And here are two of my favorite egg dishes...

    First of all -- scrambled eggs.



    The scrambled eggs I make today are nothing at all like the ones my mother made. That's because she didn't have the benefit of the Food Network. The Barefoot Contessa, to be specific. You can go to her website for a complete walk-through.

    But basically -- it's just this. Melt a bit of butter in the pan, whip six eggs with a little milk, then cook them low and slow...constantly stirring. Sure -- doing it this way takes a little longer -- but IT WILL BE SOOO WORTH IT. Your eggs will be creamy and fluffy. Absolutely wonderful. With some hot, buttered toast -- well -- life just doesn't get any better than this.

    My friend Michael recommends adding cream cheese to the eggs before he scrambles them -- and I am a big fan of cream cheese -- so that sounds like a great idea!

    Egg Dish #2: Frittata

    This is a fairly new to my recipe box -- but the simple frittat has become my go-to-supper. When I realize it's 5:00 and I forgot to get anything out of the freezer -- it's TIME TO FRITTATA...

    The BEST thing about a frittata is that you start with leftovers. You can (and should) use anything that's already in your refrigerator. Whenever I make spaghetti, I make EXTRA -- knowing there could be a frittata in my future.


    So -- starting with old cold spaghetti -- you add the eggs, bits of cheese, cut up meat -- chicken, even lunch meat or salami, green beans, asparagus, olives, tomatos, onion, celery, etc. Really -- the ingredients are all about what you have in your frig...

    One example: cubed Pepperjack cheese, sliced salami, black and green olives, diced green onion, celery or radishes.

    Another example: leftover rotisserie chicken, grated cheddar cheese and Parmasean, mushrooms,
    green beans, tomatoes...

    So -- the recipe is not as important as the technique -- and here it is:

    Beat at least six eggs in a large bowl...then add 1-2 cups of cold spaghetti and another cup of assorted ingredients.

    When you're mixing up your frittata -- you'll be heating your well seasoned iron skillet (my favorite -- but you choose)...When the skillet is hot, add 1 tbl of oil and swirl it to cover the pan -- then pour in the fritatta. Do not stir....turn the heat down to medium low and let it cook until it's brown.

    When the bottom of the frittata is brown (about 8 minutes on my stove) -- transfer the skillet into your preheated oven. (350). You want the center set and the top brown. (maybe 15 minutes?)

    I often add another cup of cheese on the top when I put it in the oven for the final bake. And, since I have an electric oven -- I sometimes do the last 2 minutes under the broiler to make the cheese bubbly...

    If your iron skillet is well-seasoned -- you simply slip the entire fritatta out of the pan onto a serving platter. DELICIOUS...

    Thrifting Treasure


    Many times, my thrifting is a treasure hunt for clothes for my grandchildren. (It feels great to use the plural of that word...!) Lillian has many winter coats, snow pants, mittens, hats, fleece robes,dozens of pajamas, scores of velvet dresses -- and young Warren already has so many clothes he's started to outgrow them before he can WEAR them.

    Finding SHOES or boots is one of my favorite things. I love finding little girl black patent leather shoes, tap shoes, Ugg boots, Cowboy boots, red glitter, Tinkerbell sandals...silver slippers...all my little grand-nieces and nephews play the Aunt Rita shoe game -- and I am DElighted when the slipper fits (that's a Cinderella metaphor)...



    Yes, I spend way too much time thrifting. I never know exactly what I'm looking for.  I like to think that thrifting is a wonderful exercise in keeping an open mind...(yes, it's true -- hoarders can rationalize ANYTHING...)

    Of course -- I buy way too many books...
     ...like this 1952 Meta Givens Cookbook my mother used.......leather purses are another weakness of mine.  Because I am so easily amused -- it doesn't take much to delight me...  

    Many times -- it's simply a 25 cent t-shirt with some funny words....



    But -- last week -- I hit the jackpot. Really. In two very different locations -- I found TWO treasures that are just remarkable. Honestly -- I feel like I found the Holy Grail and I didn't even know I was on the quest...

    Zebra mini-sofa

    This project falls under the category of, "you never know what you're going to find at the thrift store..."
    Two weeks before Christmas -- there it was -- a child-sized foam rubber sofa...for $6.94. WHA?? How can I NOT BUY THE DARN THING???


    This picture gives you a better idea about the size. AND shows the ottoman...(included in the price).

    I chose a zebra corduroy fabric (and you were worried, Rhonda!)...the black and teal are pieces cut from velour shirts off t-shirt mountain.......

    This is what the back of the sofa looks like...I used the zebra to piece together the velour...

    By the time I started on the ottoman -- I had to cut up another shirt...

    Sticking with the jungle theme -- I cut up a black sweater than had several cat appliques...

    I recycled some embroidery...this piece HAD been starched onto Lillian's wall...I just wet it to remove it from the wall and decided to sew it on top of the ottoman...

    Christmas Eve, Lilly and Sophie settled right into her new little mini-sofa...

    This was a wonderful project. I loved finding the sofa in the first place...then going through my huge fabric/t-shirt stash, finding just the right pieces to give it an updated makeover...

    The week before Christmas, I'd be in the basement, working on Lilly's little sofa until the wee hours of the morning...and I LOVED DOING IT, I LOVED THE WAY IT TURNED OUT...and -- even more importantly -- Lillian loved it, too. Yes, people -- this is almost a smile...

    Aunt Rita's Christmas Tea, Part #2

    One thing I know for sure is that any mission in life is easier if you HAVE SISTERS. On the day I had invited a dozen of my great-nephews and nieces to the Aunt Rita Christmas Tea party -- I had the two best helpers in the world. My sisters Ronda and Deena. The OTHER Grandmothers to my pint-size guests....

    Deena's crew were the first to arrive. I only have ONE grandchild -- Deena has been blessed seven times -- here we are with four of ém.... It's going to be a busy day...

    The people at the West Kimberly Mall did SUCH A GREAT job of decorating the place. They have Christmas music playing in the background...

    The main table was SO BEAUTIFUL...I was delighted with everything about this party. The food was delicious, lots of fresh fruit, bite-sized desserts...the kids were on their best behavior...

    For their main course, I ordered macaroni and cheese for the kids. It was AWESOME.

    We Grandma's had homemade chicken salad -- the kind with grapes and nuts -- on a croissant. SOOO DELICIOUS...

    I had one table full of gifts, another of Christmas books -- we played several round-robin-gift-games..

    My talented nephew, Cale, provided the entertainment...

    Then -- THE BIG SURPRISE -- and I didn't even know he was coming -- SANTA CLAUS came by to say hello.

    It was such a nice time. The kids played musical chairs -- and loved every minute of it. I don't know who had more fun -- me or them.  I hope one day they remember these little Aunt Rita adventures...

    So -- what went wrong?  Everything I've told you is 100% true...but the pain is often in what we DON'T tell.  All the planning for the party -- the food, the gifts, the games, the entertainment -- everybody making the time to come -- all these beautiful children -- who Lilly LOVES, LOVES, LOVES...but she was sick that day.

    The BEST Children's Tea Party

    Every now and then -- I have a BRILLIANT IDEA. And my 2012 Christmas Tea Party was one of my best ever....

    There is an antique mall in the west end of Davenport, Iowa -- West Kimberly Mall. Most towns have a place like this. It's a large space full of hundreds of different vendor booths -- all independent merchants -- some selling antiques, or used clothes, or handmade crafts. A couple of years ago, the new owners carved out a space in the middle of the mall to create a "Tea Room"...

    I was thinking of taking Lillian there for one of their scheduled Sunday afternoon tea parties -- but the dates didn't work out. Then it DAWNED ON ME...I could pick my own date! And wouldn't it be a lotmore fun for Lilly if the other guests were the cousins she loves so much??

    The white lace tablecloth above is the main table. I sent invitations to my nieces and nephews CHILDREN. (No parents allowed). Aunt Rita's First Christmas tea party was Sunday afternoon, December 16th. The plastic tablecloth area was set up for our craft activities...
    This is the separate dessert table. OMG. A tower of mini cupcakes...lots of fresh fruit, cookies, candy...

    In this close up picture -- you can see the little gingerbread men made out of marshmallows...WHO KNEW??

    I got there early to set up some special stuff...gifts, prizes, craft activities. The two women who were taking care of us -- Dana and Deanna. ARE YOU KIDDING ME??? THIS IS GOING TO BE SO MUCH FUN....

    I am not kidding. This was shaping up to seriously be the BEST idea I ever had...WHAT COULD POSSIBLY GO WRONG??

    Rita's Favorite Things

    I am SO HAPPY to be back into my regular blogging schedule. THERE ARE SO MANY interesting, fun things I want to share. But on this particular day, I was unable to upload pictures. Hummmm....blogging without pictures is like eating an Oreo without the cream center....

    As I was doing various picture tests -- some worked but most did not. Then I realized it was a problem with Mozilla -- not playing nice with blogger. Ugh...try again...

    And I ended up with a very random group of pictures...which, oddly, I decided to blog about. But what do these pictures have in common???

    These pictures represent a few of my FAVORITE THINGS, of course!!

    One of my favorite people in the world -- my helper, my only employee, my house manager, my part-time painter -- Carrie.   In this picture -- helping me paint the ceiling. WHAT A BIG JOB...I am soooo happy to have her come to my house once a week with that wonderful smile and can-do attitude...

    In this completely unrelated photo -- I am at Rhonda's house in Chicagoland. Admiring the picture she has hanging in her kitchen -- the EXACT same picture I have hanging in my own kitchen...

    Then -- at a writer's conference last year. I attend one or two of these events every year. And I love meeting other writers, and learning new things. What inspires them, what moves them, why they write...

    During that same visit with Rhonda -- we went to the Morton Arboreteum. Remember the crocheted tree?? I LOVE IT...And if I needed a signature photo -- this would be it. There is something so wonderful about spring...after a long winter...the warm sun on your face...being outside...and there I am, carrying my Hey Rita tote...one of my truly favorite things....

    Disney on Ice

    We have a wonderful venue here -- the Mark in Moline, Illinois -- where all the big tours come. Elton John, Bette Midler, Carrie Underwood, Maroon 5 -- and Disney on Ice.

    Because I think half the fun is the ANTICIPATION -- I decided to give Lillian a little "Disney" gift every night for a week -- ramping up to the show... this Cinderella pillow had the little mouse living in the pocket...


    The next night, there was the Tinkerbell hat...


    And, as we were going through the week-long countdown, when we got to "only one more day until Disney on Ice"...she got the Cinderella flashlight...


    Here were are, arriving at the Mark on that night...Lillian was sooo excited...


    And -- I'm not kidding -- IT IS A WONDERFUL SKATING SHOW...


    The three of us had a wonderful time. Emily, Lillian and me...at our annual Disney on Ice date.


    I already know it will be a sad day for me when there is no child in my life who would enjoy Disney on Ice...

    Yes. I know. LIVE IN THE MOMENT...

    Rose Franzen Exhibit

    Because our Gingerbread House Adventure took place at the Figge Art Museum -- I took the kids to the second floor to see the Rose Franzen Exhibit -- which had recently opened. Rose Franzen is a portrait artist from Maquoketa, Iowa. Years ago -- she started painting portraits of ordinary people -- women, men, children, babies -- people from all walks of life who lived in her little town.


    The way the portraits are hung and displayed is so interesting...The kids loved walking amongst all these people...the portraits are completely mesmerizing...you feel like these people are going to start talking to you...

    But -- here's the really fascinating thing. Once you walk to the other side of the room -- there is a single chair.

    If you sit in that chair, and use the provided eye-shield -- when you look up -- you will see the view of Maquoketa...


    The BACKS of all those portraits are trip-ticks that, when seen all together, create a three-dimensional picture of the land of Grand Wood. The town, the fields, the sky and fields...


    Brilliant. Absolutely brilliant. I have never enjoyed an art exhibit as much as this one. I hope it's something the kids will remember. I know I will...

    December Auction

    So -- if it's a Saturaday -- Bert and I are kicking about.  Maybe, if we're lucky -- there'll be an auction in DeWitt, Iowa.   We both have our favorite things to bid on...I'm a BIG sucker for something like this... 

    At first glance --it could just look like dozens of random lamps...

    
    There are bleachers full of "flats" full of all kinds of stuff...books, silverware, kitchen stuff...

    You have to LOOK CLOSER -- to find that great pair of expensive kitchen shears...or real silver serving spoons...


    You've GOT TO ADMIT -- this lamp would be a real conversation piece, eh??

    On this particular auction a few weeks ago -- I ran into two of my favorite people. My sister Ronda and her daughter Amy...

    Amy thought I should bid on this wonderful set of chairs. SHE IS RIGHT. I LOVED THEM...and they were SOO COMFORTABLE...the formica table that matched the set was also in perfect condition. My problem was that, I JUST BOUGHT A NEW SET last summer...
